Fix axes and add hide mask-related actions from sim/job

  1. Mask control is only needed in the loaded experimental data
  2. Introduce DataSource::isFromData/Sim/Job signatures instead of casting pointers for the brevity and readability
  3. Rename jobMeritsAttention to jobPlotContextChanged, no args now.
